A couple of things to note here. Firstly, a common question that comes up is, 'If God knows everything, how can He forget something?' The answer is that it doesn't say He forgets, it says He will not remember. The point is He will not bring these things back to His mind. We use the saying, 'That's something I choose to forget.' for example. We are not saying we actually forget, we choose not to think about it.
The other point to note is that there are not many verses that talk about God not remembering our sins. But, that doesn't make them any less powerful and true.
'I, even I, am he who blots out your transgressions for my own sake;and I will not remember your sins.' Is 42:25

for they will all know me,from their least to their greatest,” says the Lord:“for I will forgive their iniquity,
and I will remember their sin no more.”' Jer 31:34
